Matcha Kettle

Almost every complaint about bitter matcha traces back to one of two things, and water temperature is the more common of them. Boiling water pulls catechins out of the powder aggressively and scorches the delicate amino acids that give good matcha its sweetness — and unlike a bad whisk or a wrong bowl, this failure is invisible until you taste it. A kettle that holds 75°C removes the problem entirely.

What it is

Any kettle that lets you reach and hold a target temperature below boiling. In practice this means a variable-temperature electric kettle, though the category also covers gooseneck pour-over kettles, stovetop kettles used with a thermometer, Japanese cast-iron tetsubin, and thermal pots that hold a set temperature all day.

Why it matters

Matcha is powder, not leaf — the water contacts every particle instantly and there is no steeping time to control. Temperature is therefore the only extraction variable you have. At 100°C, catechin extraction spikes and L-theanine, the amino acid responsible for matcha's savoury sweetness, degrades. At 70–80°C you get the sweetness and body without the harsh edge. The gap between those two bowls is larger than the gap between a $20 matcha and a $60 one.

What to look for

  • Variable temperature with 1°C increments

    Preset-button kettles offering 80°C and 90°C are usable; kettles with 1°C steps let you find your own preference, which for matcha usually lands between 72°C and 78°C. Accuracy of ±2°C is achievable at $60 and is entirely sufficient — laboratory precision is not the point.

  • A hold function

    The feature that changes daily behaviour more than any other. A kettle that holds 75°C for thirty or sixty minutes means the water is ready when you are, rather than requiring a reheat cycle every time. If you drink two or three bowls across a morning, this is worth more than anything else on the spec sheet.

  • Gooseneck versus standard spout

    A gooseneck gives slow, precise pouring, which matters for pour-over coffee and matters much less for matcha — you are pouring 60ml into a wide bowl. Buy a gooseneck if you also make filter coffee. If matcha is the only use, a standard spout is easier to fill and clean.

  • 0.8 to 1.2 litre capacity

    Small kettles heat faster and hold temperature less well; large ones do the opposite. Around a litre is the right compromise for a household drinking a few bowls a day. Anything above 1.5L takes long enough to reach temperature that you will start using the microwave instead.

  • Fully stainless interior

    Check that the interior, the lid underside and the spout are all stainless rather than partly plastic. Water sitting at 75°C in contact with plastic for an hour under a hold function is a different proposition from a quick boil, and cheap kettles reveal it as a taste in the cup.

  • Skip the app

    Bluetooth kettles exist and cost double. The temperature dial on the base does the same job without a phone, a pairing failure or a discontinued app.

How long it lasts

Three to seven years for an electric kettle, and limescale is what kills most of them. In a hard-water area an undescaled kettle loses accuracy first — the scale insulates the element so the sensor reads temperature that the water has not reached — then fails outright. Descaling every six to eight weeks roughly doubles the life. Cast-iron tetsubin last generations if kept dry, and are ruined quickly if not.

Care

  • Descale every six to eight weeks in hard-water areas, every three months in soft. Scale ruins temperature accuracy before it causes visible failure.
  • Use citric acid or white vinegar for descaling, then boil and discard two full kettles of clean water to clear the taste.
  • Empty the kettle between uses rather than leaving water standing. Standing water concentrates minerals as it evaporates and picks up a stale note.
  • Never fill above the maximum line — water spitting from the spout into the base is a common cause of premature failure.
  • For a tetsubin: dry it completely after every use, ideally by putting it back on residual heat for a minute. Rust is the only real enemy.
  • Never put a tetsubin in a dishwasher or scrub the interior patina. Both are irreversible.

Common mistakes

  • Using boiling water and blaming the matcha for the bitterness. This is the most common preparation error there is.
  • Reboiling the same water repeatedly through the morning, which concentrates dissolved minerals every cycle.
  • Trusting a preset labelled "green tea" without checking it — some sit at 85°C, which is too hot for matcha.
  • Buying a gooseneck for matcha alone. The precision it offers is for pour-over coffee, not for tipping 60ml into a bowl.
  • Letting limescale build up and then wondering why the kettle's 75°C setting stopped tasting right.
  • Leaving a cast-iron tetsubin wet, which rusts it within days.

Does a cast-iron tetsubin make better matcha?

It changes the water rather than improving it outright. Cast iron releases trace amounts of iron and is traditionally credited with softening water and rounding its taste, which suits matcha. But a tetsubin has no temperature control and needs careful drying to avoid rust, so as a practical daily tool a variable-temperature electric kettle serves matcha better. A tetsubin is bought for the ritual.

Can I use a microwave to heat water for matcha?

You can, but temperature control is poor and microwaves heat unevenly, producing hot spots well above your target. If it is your only option, heat in short bursts and stir between them, and stop short of what feels right — the water continues to equalise upward for several seconds after heating.
