Best Water for Matcha

A bowl of matcha is roughly 99% water by weight, which makes water the largest single ingredient by an enormous margin — and the one almost nobody thinks about. Japanese tea culture has treated water as a serious variable for centuries, and Japan's naturally soft water is part of why the tea evolved the way it did. If your matcha tastes flat, chalky or oddly bitter despite good powder and correct temperature, the water is the most likely culprit.

Use soft, filtered water with a total dissolved solids (TDS) of 30 to 80 ppm and a pH between 6.5 and 7.5. Hard tap water above 150 ppm mutes matcha's umami and dulls its green colour, because calcium and magnesium bind to the tea's catechins and amino acids. Distilled and reverse-osmosis water are equally wrong — with no minerals at all, matcha tastes hollow.

What actually matters

  • Total dissolved solids, 30–80 ppm

    TDS measures the total mineral content. Too low and there is nothing for the tea compounds to bind to, so the cup tastes thin and hollow. Too high and calcium and magnesium bind to catechins and amino acids before your tongue gets them. The Specialty Coffee Association targets around 150 ppm for coffee; matcha wants considerably softer, closer to 30–80 ppm.

  • Hardness specifically

    Hardness is the calcium and magnesium fraction of TDS, and it is the part that damages matcha. Japan's water averages roughly 50 ppm hardness. London, Munich and much of the US Midwest run 250–400 ppm. That difference is large enough to change what the same tin of matcha tastes like from one city to another.

  • pH between 6.5 and 7.5

    Neutral water extracts matcha in balance. Alkaline water above pH 8.5 pulls catechins out aggressively and makes the bowl bitter and drying. Acidic water below pH 6 dulls the colour and flattens the umami. Ionised alkaline water, often sold as a health product, is actively bad for matcha.

  • Chlorine and chloramine

    Municipal chlorine is detectable in matcha at levels far below what you notice in a glass of cold water, because heat drives it into the aroma. Any carbon filter removes it. Chloramine, used increasingly in place of chlorine, does not evaporate on standing and needs a proper filter rather than time.

  • Temperature is a separate variable

    Water chemistry and water temperature are independent problems, and fixing one does not fix the other. Aim for 70–80°C for usucha; hotter than 85°C scorches the powder regardless of how good the water is.

Taste — A basic activated-carbon jug filter removes chlorine and organic compounds, which is the majority of what makes tap water taste of tap water. In a soft-water region the result is indistinguishable from good bottled water for matcha purposes.

Performance — Carbon alone does not remove hardness. If your supply runs above about 150 ppm, you need a filter with an ion-exchange resin stage — most jug brands sell one — rather than a plain carbon cartridge.

Best for — Daily drinking anywhere with soft to moderately hard water.

Watch out — Replace cartridges on schedule. An exhausted carbon filter stops removing chlorine silently, and you will blame the matcha.

Low-mineral bottled spring water

Consistent, portable, and the practical fix in a hard-water city.

Taste — Volvic (around 130 ppm), Crystal Geyser (around 90 ppm) and Icelandic Glacial (around 60 ppm) all sit in a workable range with near-neutral pH. Matcha made with these tastes rounder and sweeter than the same powder in hard tap water.

Performance — Entirely consistent from bottle to bottle, which makes it useful for judging a new matcha.

Best for — Hard-water areas, tasting and comparing matcha, travel.

Watch out — Read the bottle. Bottled water is not automatically soft — Evian is around 300 ppm and San Pellegrino far higher. The mineral content is printed on the label.

Remineralised reverse-osmosis water

The most controlled option, for people who want to solve it properly.

Taste — RO strips essentially everything, then a remineralisation cartridge or a few drops of mineral concentrate adds back a controlled amount. The result is repeatable in a way no tap supply is.

Performance — Excellent, but only with the remineralisation stage. Pure RO water on its own makes hollow, lifeless matcha.

Best for — Very hard water areas, anyone already running an RO system for coffee.

Watch out — Do not skip remineralisation. Zero-TDS water is as wrong as very hard water, just in the opposite direction.

Unfiltered soft tap water

Fine in the right city, and free.

Taste — If you live somewhere with genuinely soft water, the main issue is chlorine rather than minerals. Drawing water and letting it stand uncovered for an hour lets free chlorine dissipate, though it does nothing for chloramine.

Performance — Good, with a chlorine note in the aroma that some people never notice and others find obvious.

Best for — Soft-water regions, casual daily drinking.

Watch out — Never use water from the hot tap. It sits in a tank and picks up dissolved metals and sediment.

Hard tap water

The usual problem

The most common reason good matcha tastes disappointing at home.

Taste — Flat and chalky, with the sweetness and umami noticeably reduced. Calcium and magnesium ions bind to catechins and to L-theanine, the amino acid responsible for matcha's savoury depth, so the parts you paid for are the parts you lose.

Performance — Also visibly dulls the colour, shifting a vivid green toward olive. Foam is coarser and dies faster.

Best for — Nothing, if you can avoid it.

Watch out — This is worth diagnosing before you conclude your matcha is bad. Make the same bowl with bottled low-mineral water and compare — the difference is usually obvious immediately.

Distilled and pure RO water

Skip it

Chemically clean, gastronomically empty.

Taste — Hollow and thin with no body. A small amount of dissolved mineral is needed for extraction to work properly and for the tongue to register body at all. Zero-TDS water makes matcha taste like a dilute suggestion of itself.

Performance — Poor extraction across the board.

Best for — Nothing tea-related.

Watch out — Counterintuitive but consistent — purer is not better here.

Alkaline ionised water

Avoid

Actively harmful to the cup.

Taste — At pH 9 and above, alkaline water extracts catechins far too aggressively. The result is harsh, drying and bitter, and it also darkens the colour. Whatever the health claims, this is the wrong water for matcha.

Performance — Over-extraction at any temperature.

Best for — Nothing tea-related.

Watch out — Some filter jugs sold as premium are alkalising jugs. Check what yours actually does.

How to actually use it

    Find out how hard your water is

    Your water utility publishes this annually, usually as ppm or grains per gallon. Under 60 ppm is soft, 60–120 moderately hard, over 180 hard. A $15 TDS meter gives you a live number and is the fastest way to settle the question.

    Filter, then heat

    Filter cold water and heat it once. Reboiling water repeatedly concentrates dissolved minerals as steam leaves, which is a slow way of making your water harder over the course of a morning.

    Bring to 70–80°C

    For usucha, 70–80°C. For koicha, closer to 70°C. If your kettle has no temperature control, boil and let it stand for three to four minutes, or pour into a cold vessel once, which drops roughly 10°C.

    Test the difference once

    Make two bowls from the same tin — one with your usual water, one with low-mineral bottled water. This takes five minutes and tells you definitively whether water is your problem.

  • Blaming the matcha for a flat, chalky cup when the cause is 300 ppm tap water.
  • Using distilled or pure RO water on the assumption that purer is better — matcha needs some mineral content to extract properly.
  • Buying premium mineral water like Evian for matcha. High mineral content is the problem, not the solution.
  • Reboiling the same kettle water repeatedly through the morning, which steadily concentrates the minerals.
  • Using hot-tap water instead of heating cold water.
  • Fixing the water but leaving the temperature at boiling, which scorches the powder regardless.
