Barista-grade oat milk. Its 3% fat produces dense microfoam and its mild maltose sweetness balances matcha's bitterness without covering the tea. Whole dairy milk gives a richer texture but its casein binds matcha's catechins and flattens the flavour. Standard almond milk is the weakest option — too low in fat and protein to froth.
What water should I use for matcha?
Soft, filtered water at 30 to 80 ppm total dissolved solids with a pH between 6.5 and 7.5. Hard tap water above 150 ppm mutes matcha's umami and dulls its colour, because calcium and magnesium bind to the tea's catechins and amino acids. Distilled water is equally wrong — with no minerals, matcha tastes hollow.
Should I use ceremonial grade matcha for lattes?
Generally no. Ceremonial grade is first-harvest matcha prized for delicate umami and low astringency, and milk masks exactly those qualities. A purpose-made latte blend or premium culinary grade at $0.50 to $1.00 per gram has more body and stays present through milk, at a fraction of the price.
How do you decide what goes well with matcha?
