Why temperature matters here

Matcha is powder rather than leaf, so the water contacts every particle immediately and there is no steeping time to adjust. Temperature is the only extraction variable you control. At boiling, catechin extraction spikes and L-theanine — the amino acid behind matcha's savoury sweetness — degrades. The result is a harsh, drying bowl, and it is by far the most common reason home matcha disappoints.

The gap between a bowl made at 100°C and the same matcha at 75°C is larger than the gap between a $20 tin and a $60 one. It is worth getting right before you spend more on the powder.

How this is calculated

Newton's law of cooling: the rate a liquid loses heat is proportional to how much hotter it is than the room. That gives an exponential curve — fast at first, then slower as it approaches room temperature — which is why the first 20°C disappears far quicker than the next 20°C.

The constants here are calibrated for typical domestic kettles and cups, and adjusted for volume, since a larger body of water has less surface area relative to its mass and cools proportionally slower. Real kettles vary with material, wall thickness, lid fit and draughts, so treat these as good estimates rather than measurements. Time your own setup once against a thermometer and you will have a number you can rely on permanently.

Does a closed kettle keep water hot longer?

Considerably longer. Most heat leaves as evaporating steam, so a closed lid roughly halves the cooling rate compared with an open one. If you boil and walk away with the lid down, expect the water to still be too hot for matcha ten minutes later.

Do I need a temperature-control kettle for matcha?

Not strictly, but it is the highest-impact inexpensive upgrade if you drink matcha daily. Without one, boiling and waiting works fine — the point of this calculator is to tell you how long.
