Taste — Mildly sweet with a soft cereal note. The sweetness comes from enzymes breaking oat starch into maltose during production, not from added sugar, which is why it tastes rounded rather than sugary. It sits underneath matcha's vegetal bitterness and softens the edges.
Performance — The best foam of any plant milk. Barista versions add 3% rapeseed or sunflower oil plus dipotassium phosphate, which raises fat and buffers acidity. Steamed or frothed to 60–65°C it produces a glossy microfoam that holds latte art.
Best for — Hot and iced lattes, anyone who wants café texture at home.
Watch out — Standard (non-barista) oat milk has roughly a third of the fat and will produce large collapsing bubbles. Check the carton says barista, or check for 3g fat per 100ml.
