Matcha Bowl Materials
A chawan is wide and shallow, which is excellent for whisking and terrible for keeping a drink warm — a wide bowl has an enormous surface area relative to its volume, so 60ml of matcha at 75°C is dropping temperature from the moment you pour. The material and thickness of the bowl decide how fast. This is the one specification that changes the drinking experience rather than the look, and it is the one least often discussed.
The short answer
Thick-walled stoneware is the best everyday matcha bowl material: it retains heat well, survives daily handling and costs $25–60. Raku earthenware holds heat best of all because the clay body is porous and insulating, but it is fragile and expensive. Porcelain is the most durable and the worst insulator — a thin porcelain bowl loses roughly twice the heat of thick stoneware.
What it is
The clay body and firing method a chawan is made from. The main families are stoneware, porcelain, earthenware including raku, and non-ceramic materials such as glass and melamine. Each is fired at a different temperature, which determines porosity, weight, thermal behaviour and how the glaze sits.
Why it matters
Matcha is drunk in a few mouthfuls but whisked, admired and sipped over several minutes, and a bowl that has dropped to lukewarm changes the flavour noticeably — sweetness and umami read weaker as the temperature falls. Heat retention is a function of wall thickness and the clay's porosity, both of which vary enormously between materials that look similar in a photograph.
What to look for
Wall thickness, 5–8mm
This matters more than the clay type. A 7mm stoneware wall holds heat roughly twice as long as a 3mm porcelain one, regardless of what either is made from. You can judge thickness by weight — a 12cm chawan under 250g is thin, 300–400g is substantial. Sellers rarely state thickness, so weight is your proxy.
Firing temperature and porosity
Earthenware and raku are fired low, around 800–1,000°C, leaving a porous body full of tiny air pockets that insulate genuinely well. Stoneware fires at 1,200–1,300°C and is denser. Porcelain fires highest and is effectively vitrified — non-porous, strong, and thermally conductive, which is exactly wrong for a tea bowl.
The kodai (foot ring)
The raised ring on the base is not just decoration. A well-cut kodai lifts the bowl off the table, creating an air gap that slows heat loss through the base and keeps the bowl comfortable to hold. Bowls with flat or shallow bases get hot to hold and cool faster.
Glaze and crazing
Many traditional glazes craze — they develop a fine network of cracks over time, which is expected and often desired aesthetically. On a porous earthenware body this means the bowl slowly absorbs tea and changes colour over years, which practitioners value. If you do not want that, choose a fully glazed stoneware or porcelain bowl.
Interior surface texture
The inside base should be smooth enough not to shred a chasen but not so slick that the whisk skates. A slightly matte glazed interior is ideal. Heavily textured or unglazed interiors look striking and destroy bamboo prongs within months.
Whether it is dishwasher and microwave safe
Almost no traditional Japanese chawan is either. Raku and unglazed-foot bowls must be hand-washed, and gold or silver decoration rules out the microwave. If you want a bowl you can treat like a mug, that points to industrial porcelain or stoneware.
How long it lasts
Indefinitely, until it is dropped — which is the only real failure mode for a ceramic bowl. Porcelain survives daily handling best; raku and earthenware are genuinely fragile and can crack from thermal shock alone if you pour boiling water into a cold bowl. Crazed glazes stain and darken over years, which is a change rather than damage. A broken bowl of value is traditionally repaired with kintsugi rather than replaced.

Japanese chawan are usually described by their kiln or ware type rather than by a brand. Here is what those names tell you about the material. We don't sell any of these and take no commission.
Stoneware (the everyday standard)
Mino and Seto, Gifu/Aichi, Japan
Most affordable Japanese chawan are Mino or Seto ware. Dense, durable, decent heat retention at $25–60. The right default for a first serious bowl.
Raku ware
Kyoto, Japan
Hand-formed without a wheel, low-fired, porous and light. The best insulator of any chawan material and the traditional choice for tea ceremony. Fragile, hand-wash only, and $200 upward for anything genuine.
Hagi ware
Yamaguchi, Japan
Soft, porous clay with a crazed glaze that visibly changes colour with years of use — a phenomenon known as the seven transformations. Excellent heat retention, $60–150.
Porcelain
Arita and Kutani, Japan; also global mass production
Hard, white, thin and often finely decorated. The most durable and the worst at holding heat. Good for iced matcha and for households that break things.
Glass
Various
$20–35. No heat retention at all, but shows the colour and foam beautifully, which is why cafés use glass for iced matcha. A poor choice for hot usucha.
Care
- Warm the bowl before use — rinse with hot water and discard. This costs nothing, adds several degrees to the finished drink, and protects fragile bowls from thermal shock.
- Hand-wash with warm water and no soap. Porous clay absorbs detergent and releases it into the next bowl.
- Dry thoroughly before storing, especially porous raku and Hagi, which can hold moisture in the clay body and develop odour.
- Never pour boiling water into a cold porous bowl. Thermal shock cracks raku and earthenware and there is no repairing it invisibly.
- Store unstacked, or with soft cloth between bowls. Foot rings are unglazed and will scratch the interior of the bowl below.
- Avoid the dishwasher for anything traditional. Sustained heat and detergent damage crazed glazes quickly.
Common mistakes
- Choosing a bowl on appearance alone and finding it goes lukewarm in ninety seconds.
- Buying thin porcelain for hot usucha. It is the most durable material and the worst insulator.
- Pouring boiling water into a cold raku or Hagi bowl and cracking it.
- Using soap on porous clay, which absorbs it and taints the next several bowls.
- Buying a bowl with a heavily textured unglazed interior, which shreds a chasen within months.
- Stacking bowls directly, so unglazed foot rings scratch the interiors beneath them.

Can you put a matcha bowl in the dishwasher?
Almost never, if it is a traditional Japanese chawan. Porous clay bodies absorb detergent and release it into later bowls, crazed glazes are damaged by sustained heat, and unglazed foot rings chip. Mass-produced porcelain bowls sold as dishwasher-safe are the exception. For everything else, hand-wash in warm water with no soap.
What is the kodai on a matcha bowl?
The kodai is the raised foot ring on the underside of the bowl. It lifts the bowl off the surface, which creates an insulating air gap that slows heat loss through the base and keeps the bowl comfortable to hold. It is also the part potters traditionally leave unglazed, so it shows the raw clay body and is closely examined as a mark of the maker's skill.
