Premium-grade (sometimes called daily-grade or latte-grade) is the middle tier of matcha — bright green, smooth enough to drink with water but cheap enough not to feel guilty about putting it in a latte. For most people making matcha at home, this is the right grade to buy. Slight grass and bitterness are fine; pungent or hay-like flavor is not. Expect $15–30 for a 30g tin.
In practice
- The pragmatic middle: later harvest or slightly shorter shading than ceremonial, still shade-grown and stone-ground. Bright green with a mild edge of astringency.
- The right default for daily drinking — good enough to whisk plain, cheap enough not to think about it.
- Typically £0.50–1.00 per gram, so £15–30 for 30 g.
- Often labelled 'daily', 'latte' or 'everyday' grade rather than premium, since this tier has the least standardised naming of all.
The common mistake
Skipping straight from culinary to ceremonial. Most people who think they dislike plain matcha have only tried culinary grade — premium is the tier where whisked matcha becomes genuinely pleasant, and it is the upgrade worth making first.
